Brokkoli Quinoa Salad
Ingredients
servings.| 200 | g | Quinoa |
| 600 | g | Brokkoli |
| 650 | g | Carrots |
| 100 | g | Roasted and salted pistaccios (unpeeled) |
| 1 | bundle(s) | Spring onion |
| 2 | table spoon(s) | Honey |
| 2 | table spoon(s) | Olive oil |
| 2 | table spoon(s) | Lemon juice |
| 4 | table spoon(s) | Vinegar |
| 1 | tea spoon(s) | Pepper |
| 0.5 | tea spoon(s) | Salt |
Preparation

Cook the Quinoa
Wash the quinoa. Use a small pot to boil some water, then add the 200 g quinoa and simmer until they pop open. Takes about 15 to 20 minutes. -
Prepare the brokkoli
Cut the brokkoli into pieces (you can peel and include the stem) and wash it. Boil salted water and add the brokkoli for a short amount of time: Between 2 and 3 minutes. Then take it out and let it cool. -
Cut the carrots
Peel the carrots and cut them into pieces of about 5 cm, or the length of your pinky. Then slice them up really, really thin. -
Cut the spring onions
Cut the spring onions into thin slices. -
Cut the brokkoli
Split the roses of the brokkoli, so that they easily fit into your mouth. - Peel the pistaccios

Prepare the dressing
Give 2 table spoon(s) of olive oil, 2 table spoon(s) of honey, 2 table spoon(s) of lemon juice, 4 table spoon(s) of vinegar, 1 tea spoon(s) of pepper and 0.5 tea spoon(s) of salt into a cup and mix. -
Mix everything
Mix the quinoa, the veggies, the pistaccios and the dressing. -
Season to taste
Quite likely you'll need more dressing...
Quick prep

Cook the quinoa
Wash 200 g of quinoa
Boil water in small pot
Add quinoa
Simmer for 15 to 20 minutes -
Prepare the brokkoli
Cut brokkoli into peaces
Wash brokkoli
Boil salted water
Add brokkoli for 2 to 3 minutes
Take it out and let it cool -
Cut the carrots
Peel 'em
Cut into peaces of 5 cm / 1 pinky
Slice them up very thin -
Cut the spring onions
Wash 'em
Cut them into thin slices -
Cut the brokkoli
Split roses into smaller pieces - Peel the pistaccios

Mix- 2 table spoon(s) olive oil
- 2 table spoon(s) honey
- 2 table spoon(s) lemon juice
- 4 table spoon(s) vinegar
- 1 tea spoon(s) pepper
- 0.5 tea spoon(s) pepper
- Mix everything
- Season to taste
